Note - when you enter email addresses in, they aren't automatically hyperlinked. After you type it in, simply highlight it and then click the chain link icon in the toolbar. As it is an email address, it will automatically get the "mailto:" item added to the link so that if a person clicks on it, their mail program opens and addresses the mail to you.
