Conics
I teach this course for our Master of Science in Education - Mathematics graduate program. I think it is an excellent course for early-career mathematics teachers. The material reinforces and builds on the students' knowledge of many topics from the undergraduate curriculum, while definitely expanding their mathematical horizons.
