Cafe Rio was started in 1997 by Steve and Tricia Stanley in St. George, Utah. In December 2004 Bob and Kathleen Nilsen, Spencer K Hill together with SKM/Apax Partners purchased the chain which, at the time, included six locations. In the year 2011, Dave Gagnon took over as COO and CEO while Bob Baker was appointed President and CFO. In the year 2018, Steve Vaughan became CEO as Dave Gagnon retired. Previously, Mr. Vaughan was CFO. As of December 20, 2020, Cafe Rio is operating in 135 locations in 11 states. Cafe Rio's dishes are derived by the traditional cuisine from that region. Rio Grande region of Northern Mexico, Southern Texas and New Mexico. The meals are prepared in the restaurant's kitchenand served fresh each day. The restaurant's signature menu is sweet barbacoa pork burrito that is enchilada-style. There are plans to open 12 new locations by 2021 and then converting the existing locations to drive-thru's.
