Freda's Sponge Cake

Ingredients

9 eggs

1-1/2 C sugar

1/2 C orange juice

1 t lemon juice

1 t grated lemon rind

1 C cake meal

1/4 C potato starch

Directions

Preheat oven to 375 degrees.

  1. Separate eggs. Beat yolks and sugar to cream. Add orange juice and lemon. Add cake meal and potato starch to yolks. Mix 1 minute.
  2. Line the bottom of a tube pan with wax paper.
  3. In separate bowl, whip egg whites until they stand. Fold into yolk mixture.
  4. Bake at 375 degrees in ungreased tube pan for 1 hour. Remove from oven. Turn upside down (balancing the pan on an empty wine bottle works well) to cool for 1 hour. Loosen edges.

NOTE: cake meal is a flour substitute for Passover (it is made of Passover flour and water). You can get it in the ethnic aisle of the supermarket. The brand I used is made by Manischewitz.
