Apple Chutney

Ingredients

1 lemon, seeded and chopped into tiny slivers

5 cups peeled apples chopped into pieces of about 1/2 inch

2.5 cups golden brown sugar (a 1 lb. box)

1/2 lb golden raisins

3 oz crystallized ginger, chopped into tiny pieces

1.5 t salt

1/4 t cayenne powder

2 cups apple cider vinegar

Instructions

Put all ingredients into a large, heavy pot. Bring to boil, and then simmer about 1 hour. To test if the chutney is done, put a drop onto a dish that has been chilled in the freezer. If the chutney is only slightly runny, it is probably about right.

Put the chutney into sterilized canning jars. Fill each jar to within 1/4 inch of the top, screw on the lid, and turn the jar upside down to seal.

Notes

- Makes about 4 cups chutney

- For best flavor, age at least 3 months before eating.
