In West Bengal and parts of Bihar and Jharkhand, it is referred to as puchkas or fuchkas, with tamarind pulp being the crucial ingredient for this particular variation.

Although the filling and pani vary extensively to suit individual preferences, there are two universally agreed-upon rules: consume the pani puri swiftly to prevent the puri from becoming soggy or leaking, and devour it in a single bite to avoid a crumbly mess.
