Mini Gelatinas de Sponch hold a special place in my heart, evoking memories of joyful gatherings and sweet treats. These vibrant, fruity jelly bites are a playful twist on a classic favorite, perfect for any occasion. Each mini gelatina offers a burst of flavor and whimsy, making them a delightful addition to your dessert table and a way to bring a touch of fun to your day.
ingredients
geletine mix:
4 packets of Knox unflavored gelatine
1 cup water (cold)
gelatina mixture:
1 can evaporated milk
1 can sweetened condensed milk
1 can media crema
7.5 oz. Philadelphia strawberry cream cheese
6 galletas de sponch
1 tbsp vanilla extract
strawberry whipped cream:
1 cup heavy whipping cream
1/4 cup powdered sugar
2 tbsp Nesquik strawberry powder
1 tsp vanilla extract
1 drop of pink food coloring (optional, but i like the cream more pink)

instructions
gelatine mix:
1. pour gelatine packets into water & mix - set aside for 10 mins
2. microwave mixture for 30 seconds & mix again
gelatina mixture:
1. in a blender, blend the evaporated milk, condensed milk, media crema, cream cheese, cookies, vanilla extract, and gelatine mix - about 1 min
2. pour about 1/2 of the gelatina mixture into each greased gelatine mold - refrigerate for 20 mins
3. into the rest of the gelatina mixture, add 1 drop of pink food coloring
4. once the gelatinas have been removed from the refrigerator, pour about 1/3 cup of the pink mixture over the first layer - now, refrigerate the gelatinas for @ least 2 hrs
5. once removed from the refrigerator, carefully unmold the gelatinas
strawberry whipped cream:
1. whip the heavy cream, powdered sugar, Nesquik strawberry powder, vanilla extract, and food coloring - about 4-5 mins
2. place the frosting into a piping bag & refrigerate for @ least 20 mins (optional, but i like it cold)
assembly:
1. frost the mini gelatinas with the strawberry whipped cream and top with a galleta de sponch
