ingredients
cookie dough:
1 cup unsalted butter (softened)
1 cup granulated sugar
1 tsp vanilla extract
1/2 tsp almond extract
2 eggs (room temperature)
3 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
pink whipped frosting:
1 cup heavy whipping cream
1/4 cup powdered sugar
1 tsp vanilla extract
1 drop of pink food coloring
instructions
cookie dough:
1. cream the butter and sugar until fluffy
2. add in the eggs, vanilla extract, and almond extract - mix to combine
3. in a separate bowl, combine the flour, cornstarch, baking powder, baking soda, and salt
4. add the flour mixture to the wet mixture - fold in until no flour remains
5. portion the dough into 1/4 cup sized balls - place on baking sheet & use a cup to press down on each ball of dough to create a very thick disk
6. bake @ 350 for 13 mins
7. remove from the oven and let cool on counter for 30 mins
pink whipped frosting:
1. in a medium bowl, whip the heavy whipping, sugar, and vanilla extract - about 2 mins
2. add in a drop of pink food coloring whip to combine - about 2-3 mins
3. place the frosting into a piping bag & refrigerate for @ least 20 mins
assembly:
1. frost the cooled cookies with the pink frosting
