I've always loved the combination of chocolate and strawberries - it feels like a special treat every time. This inspired me to create my Chocolate-Covered Strawberry Crumbl Cookies, blending the rich, indulgent taste of chocolate with the sweetness of strawberries. These cookies are perfect for any occasion, whether it's a cozy night in or a special celebration.
ingredients
cookie dough:
1 cup unsalted butter (softened)
1 cup light brown sugar
3/4 cup granulated sugar
2 eggs (room temperature)
1 tbsp maple syrup
3 tsp vanilla extract
2 1/2 cups all-purpose flour
1 cup unsweetened cocoa powder
2 tsp cornstarch
1 1/2 tsp baking soda
1 tsp salt
strawberry frosting:
2 cups heavy whipping cream
1/2 cup powdered sugar
1/4 cup Nesquik srawberry powder
2 tsp vanilla extract
chocolate drizzle:
3/4 cup semi-sweet chocolate chips
1 tsp vegetable oil
instructions
cookie dough:
1. cream the butter and sugars until fluffy
2. add in the eggs, maple syrup, and vanilla extract - mix to combine
3. in a separate bowl, combine the flour, cocoa powder, cornstarch, baking soda, and salt
4. add the flour mixture to the wet mixture - fold in until no flour remains
5. portion the dough into 1/4 cup sized balls - place on baking sheet & use a cup to press down on each ball of dough to create a very thick disk
6. bake @ 350 for 12 mins
7. remove from the oven and let cool on counter for 30 mins
strawberry frosting:
1. in a large bowl, whip the heavy whipping cream, powdered sugar, Nesquik strawberry powder, and vanilla extract - about 5-6 mins
2. place the frosting into a piping bag & refrigerate for @ least 20 mins
chocolate drizzle:
1. place the chocolate chips and oil in a microwave safe bowl - heat for 30 seconds
assembly:
1. frost the cooled cookies with the strawberry frosting and top with some chocolate drizzle
