I've always been a fan of Crumbl cookies, and their unique flavors inspired me to create my own twist on a classic favorite. The rich, caramelized taste of Biscoff cookies combined with the buttery, soft texture of a Crumbl cookie is pure magic. These Crumbl Biscoff Butter Cookies are perfect for any occasion, whether it's a cozy afternoon treat or a special dessert for friends and family.
ingredients
cookie dough:
1 cup unsalted butter (softened)
1 3/4 cup light brown sugar
2 eggs (room temperature)
2 tsp vanilla extract
3 1/4 cups all-purpose flour
2 tsp cornstarch
1 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
biscoff frosting:
1 cup heavy whipping
2 tbsp granulated sugar
1/2 tsp vanilla extract
1/4 cup biscoff cookie butter
biscoff topping:
biscoff cookies (crushed)
instructions
cookie dough:
1. cream the butter and brown sugar until fluffy
2. add in the eggs and vanilla extract - mix to combine
3. in a separate bowl, combine the flour, cornstarch, baking soda, baking powder, and salt
4. add the flour mixture to the wet mixture - fold in until no flour remains
5. portion the dough into 1/4 cup sized balls - place on baking sheet & use a cup to press down on each ball of dough to create a very thick disk
6. bake @ 350 for 13 mins
7. remove from the oven and let cool on counter for 30 mins
biscoff frosting:
1. in a medium bowl, whip the heavy whipping, powdered sugar, and vanilla extract - about 3 mins
2. add in the cookie butter and whip to combine - about 3-4 mins
3. place the frosting into a piping bag & refrigerate for @ least 20 mins
biscoff topping:
1. in a small bowl, crush some biscoff cookies for the topping
assembly:
1. frost the cooled cookies with the cookie butter frosting and sprinkle some crushed biscoff cookie crumbs on top
