crumble topping:
3/4 cup all-purpose flour
1/2 cup granulated sugar
1/16 tsp salt
6 tbsp butter (cold and diced)
muffins:
2 1/2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter (softened)
1 cup granulated sugar
2 eggs (room temp)
2 tsp vanilla extract
2/3 cup milk (room temp)
1 1/2 cup strawberries (diced, about the size of a blueberry) + 2 tsp all-purpose flour
3/4 cup white chocolate chips
topping:
Smucker's strawberry jam
instructions
crumble topping:
1. in a bowl, whisk together the flour, sugar, and salt
2. add in the butter and work it into the flour mixture with your fingers - until a crumbly mixture has formed
3. refrigerate while preparing the muffins
muffins:
1. in a medium bowl, whisk together the flour, baking powder, and salt - set aside
2. in a large bowl, beat the butter and sugar until light and fluffy
3. add in the eggs and vanilla extract - mix until combined
4. alternately add the dry mixture and milk into to the wet mixture - mix until just combined
5. in a small bowl, gently toss the diced strawberries and flour
6. add the strawberries and white chocolate chips - gently fold into the batter until just combined
7. scoop the batter into muffins liners, add some strawberry jam on top, and sprinkle some crumble
8. bake for 5 mins @ 425 and then reduce temperature to 350 for 15-18 mins
