Chocolate Cake

Ingredients - Mom's Chocolate Cake

  • 1 3/4 cups flour

  • 2 cups sugar

  • 3/4 cup cocoa powder

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup buttermilk (or use whole milk with 1 TBS vinegar added and allowed to rest for 20-30 minutes)

  • 1/2 cup vegetable oil

  • 2 large eggs, slightly beaten

  • 1 tsp vanilla

  • 1 cup fresh coffee (not TOO hot and decaf instant is fine)

Directions

Grease and flour two round cake pans. Sift dry ingredients together and mix on low speed. Mix milk, oil, eggs, and vanilla and then add to flour mixture and blend. With mixer on low, slowly add hot coffee (careful to do it slowly so the eggs don’t cook! Scrape bottom of bowl and mix until combined. Pour into pans and bake at 350 F until toothpick comes out clean. 25-35 mins.

Ingredients - Cream Cheese Frosting

  • 8 oz cream cheese

  • 6 TBLS unsalted butter, at room temp

  • 3 cups confectioner’s sugar (use a little less to start and taste along the way)

  • 1 tsp vanilla

  • (Juice of 1/2 lemon is optional)

Directions

  • Cream together cream cheese and butter. Slowly sift in confectioner’s sugar and beat until incorporated. Mixture should be free of lumps. Stir in vanilla and lemon, if using.

  • Frost cake with crumb coat, and refrigerate for one hour or more to firm up. Finish frosting.
