Shane's Chocolate Chip Cookies
Welcome Back to Surprise Baker!
Today we will be baking Shane's Chocolate Chip Cookies with Kendra (and Shane!). Cookies for the third day in a row? Yes please!
Hello Bakers!
Shane and I love this Weelicious chocolate chip cookie recipe. We are new to baking so we like simple recipes. Depending on how many cookie eaters you have in your home, we pre-scooped up some cookie dough to freeze for another baking day.
Hugs,
Kendra and Shane
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs, at room temperature
1 tablespoon vanilla extract
1 cup white flour
1 1/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups semi-sweet chocolate chips
Directions
Preheat oven to 375 F.
Cream the butter and sugar in a standing mixer (or in a bowl using a hand mixer) for 4-5 minutes until light and fluffy.
Add the eggs one at a time and vanilla extract and mix for 1 minute.
Combine the white flour, whole wheat flour, baking soda and salt in a bowl and slowly incorporate into the butter and egg mixture.
Mix until combined then pour in the chocolate chips and stir.
Using a mini ice cream scooper or tbsp measure, scoop dough onto a Silpat or parchment lined baking sheet.*
Bake for 12 minutes.
Allow cookies to cool on the baking sheet for 2 minutes then remove and place on a cooling rack.
Serve.
* To freeze, place the cookie dough on a baking sheet and freeze the balls for an hour or so. Place the balls in labeled Ziploc bags, label with the date and freeze for up to 3 months. Bake as directed adding an extra minute to the cooking time.
