The Cooper's Hawk central wine production facility is located in Woodridge, Illinois.[8] Each restaurant stores and displays barrels of Cooper's Hawk wine, where they undergo the aging process from a few months up to 18 months. Cooper's Hawk makes almost 60 different wines, and sells only its own wines in its restaurants, as well as producing 12 "wines of the month" each year.[9] As of July 2021, the company had 500,000 wine club members.[10]
McEnery: If you think of a hub and spoke, we put the wine club member at the center of everything we do. We rolled out a benefit where we take the club members on trips to different culinary and wine venues. Our trips have turned into a pretty significant part of our business.
"We are selective and buying the very best fruits from areas where seasonal conditions have resulted in the year's most outstanding varietals, giving us the ability to consistently produce-award winning wines," according to the company's website.
Wine is a central part of the brand in other ways. A wine retail store in front of the new business includes a tasting room, where patrons can sample different wines before purchasing them. A wine-and-chocolates menu selection pairs chocolates and truffles with a flight of three sweet wines.
