We put up our Christmas tree and did some holiday baking over the weekend. I let the boys pick what cookies they wanted to make and they chose Chocolate Peppermint Crunch Cookies. Chocolate and mint is a popular combo, especially during the holiday months. The chocolate and peppermint combo in these cookies is perfection. I add a little peppermint extract to the chocolate cookie dough and mix in chocolate chips and peppermint crunch pieces.

Andes mints always remind me of Olive Garden. Anyone else always look forward to grabbing a handful of them while walking out after a big plate of Fettuccine Alfredo?! I also love chocolate and mint together so why not make a cookie with them?! The base of these Andes Mint Cookies is an easy chewy chocolate cookie made with cocoa powder (high five for not having to melt any chocolate!) and is just chock full of Andes mint bits. It one of my favorite holiday cookie recipes that I've made this year!

To this mixture, add the dry ingredients. Start with the baking soda, baking powder, salt, and cocoa powder and beat until combined. I like to scrape down the edges too, to make sure everything is getting combined. Then add the flour, beating until combined. Finally, fold in the Andes mint bits. You could also do a combination of Andes mint bits and chocolate chips, if you'd like! You do not need to chill this dough - you get to bake it immediately!

Form the dough into large 2-3 tablespoon sized cookie dough balls. I used a cookie scoop and made both big and smaller cookies with this dough. Both are delicious but I really like the bigger cookies. Place the dough balls on a parchment paper or silicone mat lined baking sheet, press some additional Andes mint chips onto the top of the cookie dough balls, and then bake for 8-10 minutes. You'll want closer to 8 minutes for smaller cookies and closer to 10 minutes for larger cookies. Let them cool on the baking sheet for about 5 minutes and then transfer to a cooling rack to cool completely. Enjoy!

Ok started the process by setting up a 15 year old netbook with 2 GB memory and atom processor. It now has LMDE 5 with cinnamon installed. Installation was slower than standard Linux mint 19, 32 bit mate. But then running the updates took a very long time even with fibre connection just over 2 hours.

Having played the desktop is not that different to mate so may just try a few clients and see how that works.

The older machines with 19 mate are getting messages of end of life so good time to update even if it takes a while for the process.

In my experience, iced teas tend to have a delicate, subtle flavour, and this is something that I wanted to ensure I carried through into the lolly. I first steeped fresh mint leaves and green tea in hot water, then played around with different quantities of rose water and sweetener. After an initial taste testing, I decided to add coconut milk into the mix, which helped to round off the flavours beautifully.

Method

1 Place the mint in a large mug. Add the hot water. Press down on the mint leaves with a spoon to help release their flavour. Add the green tea bag and leave to steep for 5 minutes.

3 Remove the tea bag, then tip the contents of the mug (water and mint leaves) into the jug with the coconut milk. Press down on the mint leaves again, either using a spoon or bash them with the end of a rolling pin to release more flavour.

6 Pour the liquid into the lolly moulds. You may want to strain it first to remove the mint leaves, but I find it easy enough to pour the liquid and avoid the leaves, as they tend to settle at the bottom of the jug.

And last but not least I wanted a white chocolate dipped peppermint cookie so I replaced 1 tsp of the vanilla with peppermint extract, and finished them off with a generous dose of white chocolate (think cookies and cream), then sprinkled them with some pretty peppermint bits.
