Chai tea is a combination of black tea with added spices such as cardamom, cinnamon, clove, black pepper, nutmeg, star anise, ginger and fennel. In India it is called masala chai and traditionally brewed strong and mixed with equal parts milk. A distinctly sweeter and creamier version, created for the American palatte is known as the "chai latte." The selections in this category are of the sweeter and creamier variety... the American Chai Latte.

If you've ever had a chai, you may have noticed a warming sensation from the added spices. This unique experience differentiates masala chai from many other warm drinks. If you purchased at a coffee shop, it may not be the same as having home-brewed chai, but it demonstrates the effect of the blend from popular Americanized versions.

One legend believes masala chai was created by a noble court in India, while other sources offer Thailand as the official origin. Most stories point to a king who created masala chai to bring "life" to its drinkers.

Initially, masala chai did not contain caffeine, instead just a combination of spices to create the unique flavor it offers. Many different recipes were created using various spices, and the tea was served both hot and cold. It was also originally used as herbal medicine to aid with minor illnesses.

Street vendors fill the streets of India selling anything from food to drinks, so offering this specific tea via street vendors fit within local food culture. To make the tea more desirable, street vendors began including the Assam tea in their chai flavored beverages. This was one of the first steps towards creating the chai tea that is widely consumed today.

Initially, the Assam black tea was the priciest part of masala chai. To offset the cost (and taste), street vendors also began including milk, sugar, and additional spices. This assisted with the taste and helped keep costs down as less black tea was needed for each drink.

In short, absolutely. From the way the tea is referred to spanning the method for preparation, you'll find quite a few differences. Most Americans will refer to masala chai as chai tea. Chai directly translates to tea, causing the name to be a bit repetitive (tea tea).

Many masalas (spice blends) are available and are found throughout India. One is used in chai, however there are quite a large number of blends that are used for many other purposes. Here are a few blends to give you an idea of what else to explore.

The word "chai" is the word for tea in many parts of the world. It is a centuries-old beverage whose origins are said to go back over 5,000 year to India, where it then spread to Asia and the Middle East. Chai is black tea brewed with select spices, sweetener, and milk. The spices used vary from region to region, but the most common are cinnamon, cardamom, cloves, ginger, and pepper. Chai that is found in tea bags or loose leaf form is usually unsweetened and contains no milk.

The setup for the drama cleverly reveals the deceptions this young man must unleash upon his father, who runs a very tight ship — no dating, no music, no R-rated movies. When his parents arrive at his college dormitory room, they find medical textbooks spread over all the chairs. Naturally they have no idea that he is spending most of his time creating music for Fathead, a rock band. Nor do they know he is dating an American girl, Jen (Jamie Hurley), a devotee of his music. But this cleverly constructed world collapses when the band ditches him and his girlfriend walks away.

I was staying at a friends' house outside Delhi a few years back. They were excited about the fact that I had business making chai in the US, and we talked about it often. It was a topic dear to their heart, since chai is such an important part of their daily life. They made me their own chai, which was absolutely delicious. Then they took me aside and asked, with some humor in their eyes, "But why do Americans call it chai tea?"

It was a valid question.

For those of us chai lovers who grew up in the US, outside of Indian culture, we learned to call this drink "chai tea", or even a "chai tea latte". The term was coined at coffeehouses, where it has been a menu staple since the 1990s.

But in the early days of my personal chai obsession, I learned that chai actually means tea in Hindi, and many other languages spoken throughout India and Pakistan. So saying "chai tea" is pretty redundant. It actually just means "tea...tea". It (kinda?) made sense at the time, it was a way of explaining this drink to a new audience, building the English translation directly into the name.

The specific term for the type of chai we're talking about is Masala Chai (spice tea). Often this is shorthanded to just plain "chai", and has endless recipe variations, depending on regional tendencies and familial traditions.

I've been making chai for a living for 16 years, and I never used to correct folks who order a "chai tea" at my farmers' market booth. I'm not of Indian descent, so I don't have the deep-rooted cultural experience with chai that folks of the Indian diaspora had, so I felt like it wasn't my place, like I was overstepping my bounds as an outsider. I also knew that my customers are respectful, lovely people who absolutely meant well and thought it was the correct term.

But I had a conversation with a Punjabi-American chai friend recently, who said she definitely corrects anyone who calls chai by this improper name. It hit me then that I have a responsibility to pass the knowledge on to my customers. I realized that if I'm teaching folks how brew and enjoy chai, I definitely need to teach people the right way to say it.

I'm still (always) learning about chai and the traditions that surround it, but I want to pass on what I learn.

So for now, dear chai friends, in order to pay respect (in a small but important way) to the culture that created this wonderful drink that we love- let's call it by its proper name. Chai. Or better yet- Masala Chai!

Love, Sarah

PS-Thanks for listening to my thoughts on this topic, SO much to talk about here, but I tried to keep it simple, especially since I'm better at making chai than writing;)

NYC's Kolkata Chai Co. Wants to Reclaim Chai's Narrative

Why You Should Never Use The Phrase "Chai Tea"

Ani and Ayan Sanyal wanted others to experience the chai they grew up enjoying. So the New York-based brothers opened Kolkata Chai Co. in Manhattan for people to taste chai flavors that are true to them.

Growing up, both brothers felt chai was misrepresented in the States, as it was made and distributed by corporations or someone attempting their best version of it by using things such as whipped cream, pumpkin spice or syrup concentrations.

Everything on the menu at Kolkata Chai Co. -- including nimbu chai -- comes from what they learned and studied while in India and time spent with family, while combining those traditional flavors with modern twists such as oat milk and cold brew.
