"before u watch:
1) my philosophy is that knowing how and why cooking works is most important. just like the chinese novels, it is your foundation. because as long as you know that, you can google and follow any recipe and learn something new each recipe, or you know how to change/add things. more importantly, having a good foundation lets you think outside the box and create your own food. if you just blindly follow recipes without fundamentals, you will not have proper technique, form bad habits, box yourself in, not know how to change the recipe to make it taste better, and box your creativity in
2) videos 1 and 3 are very basics of cooking video 2 is also basics, but it shows a complete noob going through the lessons so you can see what its like on a more relatable basis video 4 is common mistakes video 5 is how cooking meat works. even though it says steak, most (but not all) things apply to fish, chicken, pork, etc. (ex maillard reaction and properly salting)
3) the first half of the playlist is from white people, so i tried to have the second half from asian ppl. idk about viet cooking so ask ur mom and aunts for that lol
4) Ethan Chlebowski is good channel because his channel is very informative and has both theoretical and experimental cooking science. Downside is that he doesnt cover any practical techniques to get those “ideal” food states. Also good to know how to buy best value for some ingredients, instead of just buying the cheapest
5) heat control is one of the most important but also hardest skills in cooking. before i started using pans and stoves, i usually cooked with ovens, air fryers, and sous vide."
Quynh taught me a lot of Vietnamese dish. She also sent me a lot of Viet recipes to try out :))

I'm an OK cook now. Not good good but if I have enough time and ingredients, I can cook a decent meal that Nghi doesn't complaint too much haha.
