Being stuck at home can be very boring. It can often be a challenge to find something to do, especially when you’ve outgrown options like dress ups or playing with dollies and race cars.
I often find reading great, but there does come a time when you run out of things to read and that is when I rely on baking.
Cooking is an awesome pastime because as the chef you get first dibs on licking the bowl.
One of my favourite go-to recipes is Brownies. Last year I came across a recipe in the “Birdsnest Bake off” recipe book that came with some clothes that my mum bought. I was doubtful, but they turned out to be great; crispy on the top, chewy in the middle and deliciously chocolatey. I now suspect it was taken from a Stephanie Alexander cookbook, but does it really matter?
I make them pretty much every week and my whole family loves them. They are quick and easy, and a real mood lifter. Something that I think everybody needs at the moment.
Ingredients
4 Eggs
250g butter
2 ½ cups caster sugar or brown sugar
2/3 cup plain flour
200g choc chips
1 tsp baking powder
2 tsp vanilla
Method
Heat oven at 160 degrees Celsius and line a slice tin with baking paper.
Mix the cocoa, sugar, flour and baking powder in a bowl. Melt butter and add to the mixture along with eggs and vanilla. Stir together and add choc chips.
Pour into tin and bake in the oven for 45 – 55 minutes (it’s different for every oven.)
Once taken out you can dust with icing sugar or serve with ice-cream or custard.
If you want instead of using choc chips you can use nuts for a bit of extra flavour. Walnuts work great!
