Makes 8 jars of jelly (250 mL jars)
Ingredients:
750 grams of frozen strawberries, thawed
750 grams of frozen raspberries, thawed
500 grams of sugar
Juice and peels of 3 lemons
50 grams of cornstarch or enough pectin/gelatin to set
5-10 grams of salt
Blend defrosted strawberries and raspberries until liquid. Strain until there are no seeds (using a fine mesh sieve). Combine all ingredients except cornstarch in a pot and bring to a boil. Combine cornstarch with some water, and slowly add in a bit of hot jelly until the cornstarch is dissolved. Incorporate, stir well. Blend final product if needed.
Notes: Work in Progress
100 grams of cornstarch is too much, but was combined with 80 grams of pectin. Retry with only pectin.
Overboiling causes a colour shift to be less clear and more opaque. The flavor is still good.
Can be made with a setting/thickening agent to make lemonade (dilute with water, tea, or carbonated water)
