Makes one loaf
Ingredients:
1-2 shredded carrots
1 chopped apple, unpeeled
1 teaspoon of baking soda
½ teaspoon of baking powder
1 teaspoon of vanilla
Pinch of salt
Cinnamon, nutmeg and ginger, to taste
¾ cups of applesauce
1 ¾ cups of flour
¼ cup of vegetable oil, melted butter or melted margarine
½ cup of water or milk
¼ cup - ⅓ cup of sugar
Line a loaf pan with parchment paper. Combine all dry ingredients and all wet ingredients separately, then mix together. Add in carrots and apples. Bake at 350°F for 1 hour.
