Banana Oat Muffins
Makes one dozen muffins
Ingredients:
2-3 bananas, mashed
1 teaspoon of vanilla extract
1 egg
¼ cup of neutral oil or melted butter
¼ cup of water
1 teaspoon of baking soda
½ teaspoon of salt
Cinnamon and nutmeg, to taste
½ cup of oats
½ cup + ⅔ cup of flour
⅔ cup of sugar
Mix bananas, vanilla, egg, oil and water in a glass measuring cup. Add the remaining ingredients to a bowl and mix well, then add in the wet ingredients. Stir until combined and line a 12-muffin tin with papers. Divide batter evenly. Bake at 375°F for 15-20 minutes.
Notes:
Can reduce sugar to ½ cup.
Add ¼ cup of chocolate chips if desired.
