Makes 1 loaf
Ingredients:
2 - 4 bananas, mashed
¼ cup of neutral oil or melted butter
2 tablespoons of water
½ teaspoon of baking soda
1 ½ teaspoons of baking powder
Pinch of salt
Cinnamon and nutmeg, to taste
⅓ cup of brown sugar
¼ cup of applesauce
1 teaspoon of vanilla
1 ½ cups of flour
Line a loaf pan with parchment paper. Combine all dry ingredients and all wet ingredients separately, then mix together. Bake at 350°F for 1 hour.
Notes:
If you don’t have applesauce, it can be replaced with 1 egg, however the applesauce adds sweetness to the banana bread that will be lost. If desired, increase the sugar to ½ cup when using eggs.
The recipe is not as good with eggs.
This recipe works with 3 bananas and no eggs.
When baked in a 6 cup bundt pan, bake for 15-20 minutes
Variation: Add green cardamom, ginger, black pepper, extra vanilla and a chai glaze for a spiced loaf.
