Makes one loaf
Ingredients:
2 cups of all purpose flour
1 cup of whole wheat flour
1 ½ teaspoons of salt
1 ½ teaspoons of sugar
1 ½ teaspoons of yeast
1 ½ cups of warm water
1 tablespoon of olive oil
Unsalted butter, to grease the loaf pan (salted butter will work but will be noticeable)
Combine the flour, salt, and sugar in a large bowl. In a glass measuring cup, mix the yeast and water. When the yeast is foamy, add it to the dry ingredients and mix well but do not knead, as the dough will be quite sticky. Cover the bowl with a towel and let it rise for 2 hours. The dough should double in size. Butter an 8x4 loaf pan. Turn the dough and coat with olive oil. Place it in the loaf pan and let it rise for another hour, removing the towel halfway. Bake at 375°F in a preheated oven for 40-45 minutes. Let cool before slicing.
Notes:
A 9x5 pan will also work, but the loaf will be slightly more square shaped.
You can replace the sugar with an equal amount of honey.
A few tablespoons of chopped fresh herbs can be added when first forming the dough for herbed breads.
