Makes one 9x13 pan
Ingredients:
3 tablespoons of butter
½ cup of flour
¼ teaspoon of salt
1 tablespoon of sugar
1 cup of milk
2 eggs
1 teaspoon of vanilla
Sliced lemon, berries and powdered sugar, to garnish
Preheat the oven to 400°F. Add the butter to a 9x13 pan or a large cast iron pan. Heat the butter in the oven while it is preheating. Meanwhile, combine all of the dry ingredients into a bowl. Add the wet ingredients to a measuring cup and whisk with the dry until you have a smooth batter. When the butter is hot and sizzling and the oven is preheated, which should be around the same time, remove the pan and pour the batter in immediately. Return to the oven and bake for 18-24 minutes, or until it has reached desired crispiness. Garnish with powdered sugar and a squeeze of fresh lemon and some seasonal berries.
Notes:
If your oven tends to heat up slowly, don’t add the butter right away. The butter only needs 7-10 minutes to heat up.
For a cinnamon apple flavour, whisk in 1 teaspoon of cinnamon to the dry ingredients and serve with maple syrup, fresh apples or apple butter,
