Makes 16 pieces
Ingredients:
4 thinly sliced onions
1 sheet of puff pastry
A sprig of thyme
½ cup of white wine
¼ cup of salted butter
Shredded mozzarella
Black pepper, to taste
Heat the butter over medium heat and caramelise the onions for 45-60 minutes. Deglaze with white wine as needed, and season with thyme and black pepper. Once the onions are deeply caramelised, set aside. Preheat the oven to 400 degrees Fahrenheit. Cut the puff pastry sheet into 16 squares and place the squares inside mini muffin tins. Divide the caramelised onions between the 16 mini muffin tins and top with mozzarella. Bake for 16-18 minutes.
