Ingredients:
1 red onion, sliced
Fresh lime juice (3-4 limes worth)
¾ cup of white vinegar
Salt and pepper, to taste
In a small saucepan, add the lime juice, vinegar, salt and pepper. Bring it to a gentle boil. Add your red onion to a jar and pour the hot pickling liquid over top. Refrigerate for up to 1 month.
