[Taberu Bambina] uses aged and fermented bamboo bran. A key feature is that you can make delicious pickled vegetables without the daily mixing required for traditional "nukadoko" (pickled vegetables).

Bamboo bran has excellent water retention and breathability, and is less likely to produce odor-causing butyric acid bacteria, so it doesn't have the odor of "nukadoko."
