Niamh completed a Bachelor of Science degree in Nutrition and Health Science from Cork Institute of Technology in 2020. During her degree, she completed a work placement as a research intern in the dairy industry, focusing on projects related to dairy nutritional ingredients and wastewater management. Following this, she worked as a research assistant at University College Cork until 2022, where she investigated the incorporation of brewing by-products into bakery products. Niamh is currently pursuing her PhD at UCC, researching the characterisation and functionalisation of protein from brewer’s spent grain and its application in novel beverages.
