Diego graduated with a Master of Science in Food Science and Technology (Food and Beverage Innovation and Management program) at Università Politecnica delle Marche, Italy, in 2023. After his graduation, he worked as a research fellow at the Università Politecnica delle Marche for one year, before moving to Cork, Ireland to pursue a PhD. Diego is passionate about food, innovation, and sustainability. He started his PhD in 2025 focusing on the formulation of sustainable plant-based beverages to counteract the progression of sarcopenia in post-menopausal women.
