Select the arc tool
Before clicking anywhere, hold Ctrl and press '+' to increase the number of segments of the arc.
Done! This number of segments will be the new default for all arcs you draw, with that arc tool, during that Sketchup session.
Notes:
Each arc tool (eg. 2-point arc, 3-point arc) will have to be set separately
When you restart Sketchup, this will reset to the default of 12 segments
Increasing the number of segments in arcs can make a model significantly heavier
Draw guides from each edge (eg. 300mm from each edge)
Draw arcs between guides
Optional: Delete guides (Edit > Delete Guides; this can be mapped to a shortcut)
Draw guides from each edge (eg. 300mm from each edge)
Draw 1 arc with desired fillet radius
Double-click all other corners to apply the same fillet radius to them
2D Fillet from the 2D Tools plugin lets you type in a fillet radius and produces arcs.
Download and install 2D Tools
Click 2D Fillet
Type in desired fillet radius
Select the edges to be filleted, one after the other

Fredo6's RoundCorner plugin makes this really fast, but produces segmented curves, not arcs. This works only on 3D edges, not flat 2D shapes.
Download and install Fredo6's RoundCorner plugin
Select vertical edges to be filleted
Click RoundCorner
Type in desired fillet radius and number of curved segments in the toolbar provided. A preview is provided, so you can see if any fillets overlap with each other.
