Serves 4
Ingredients:
🍆 1 eggplant
🥬 3 zucchini
🍅 2 tomatoes
🧀 150 g of mozzarella
🧅 2 large sweet onions from the Cévennes
🌿 2 bay leaves
🌿 bunch of basil
🫒 olive oil
🧄 1 garlic clove
🧂 salt
black pepper
Directions:
Preheat the oven (180°C).
Wash the zucchini, the eggplant, the tomatoes and the bunch of basil. Peel the garlic clove and the onions. Cut the onions, zucchini, tomatoes and eggplant into slices removing the ends.
Cut the mozzarella into thin slices.
Rub the bottom of an earthenware dish with the garlic clove.
Arrange the vegetable and cheese slices by placing them upright and alternating them: 2 zucchini slices, 2 onion slices, 1 eggplant slice, 1 tomato slice, 1 mozzarella slice and a basil leaf. Repeat the operation.
Salt, pepper, drizzle with olive oil before crumbling the 2 bay leaves on the dish.
Bake 50 to 60 min depending on the size of the rings. Enjoy it hot...
