Ingredients:
🫒 vegetable oil
🌿🌶️ spices to taste (my mix is salt, pepper, paprika, red pepper flakes, herb mix)
🍤 shrimp (i used pre-boiled and headless)
quinoa
🍅 cherry tomatoes
asparagus
🫑 bell pepper
🥦 cauliflower
🧄 garlic
🧈 tiny bit of butter
🍋🟩 a few slices of lemon/lime
Directions:
Shrimp: put in pan, drizzle a bit of oil, coat in spices. Put in oven on 200°C. If the shrimp is pre-cooked just hold it there enough to get a bit of smell/crisp. If shrimp is raw then see to it that it cooks properly.
Quinoa: put quinoa and water in a small pot with a ratio of 1 cup quinoa to 1¾ of water. Salt and pepper the water, and put a small piece of butter in it. Put it uncovered on a high fire until it starts bubbling and boiling, then set to minimum heat and cover with a lid. Cook for ~15 minutes, but check to make sure if you need to hold it longer or not.
Veggies: the veggie mix isn't strict, just whatever you have in your house really. I like some combo of cauliflower, bell pepper, asparagus and cherry tomatoes sliced in halves. Coat them all in a bit of oil and spice mix then bake also at 200°C until ready. As cook times vary for them all, add them in succession based on thickness. Cauliflower + thick asparagus bits -> bell pepper -> tomatoes + thin asparagus bits + crushed garlic.
Serve together so the quinoa gets some veggie juices, squeeze a slice of lime or lemon on top of everything.
