Kuymak is a dish popular in West Asia and the Caucasus. Its primary ingredients are corn meal and cheese.[1] It is typically served with bread and a spoon. In Azerbaijani language, it is called Quymaq. In Iran it is referred to as Kāchi penir(Persian: کاچی پنیر).
Muhlama, also referred to as "mıhlama", is a similar dish.
The Pontic Greeks, who originate from the Black Sea region, make a dish similar to kuymak; theirs is called Χαβίτς, which can be Romanized as chavítz, havítz or khavítz. Chavítz, like kuymak, is made with butter, cornmeal, cheese, water or milk, and salt. It might also include yogurt, honey, or bacon.

Ingredients:
🧈 100 g room temperature butter
🌽 3-4 tbsp corn flour
💧 1 cup of water
🧂 1 tsp salt
🧀 150 g Cheddar cheese, diced
Directions
Put the butter in the pan and melt it over medium heat.
Add the corn flour and fry for 2-3 minutes, stirring constantly.
Add the water and salt, stir once and reduce the heat. Wait without stirring until the corn flour absorbs the water and the oil rises to the top.
Then add the cheese and mix slowly from bottom to top.
When the cheeses start to melt and stretch completely, remove from the heat and serve without waiting.
