Ramazan pidesi
Serves 4-6
Ingredients:
For pre-fermentation:
🚰 200 ml warm water
200 ml flour
1 package dry yeast (10g?)
1 tsp of sugar ?
For the dough:
🚰 200 ml warm water
600 ml flour
🧂 salt 1 tsp
For sauce:
1.5 tbsp flour
🥚 1 egg yolk
🚰 50 ml. boiling water
🚰 20 ml. cold water
Toppings
🌿 sesami seeds, nagila seeds
Directions:
Take the ingredients required for pre-fermentation in a deep bowl and mix well.
Cover the mixture with cling wrap and let it ferment for 20 minutes.
At the end of the time, add 1 glass of water, 3 glasses of flour and salt necessary for the dough to the mixture that is fermented, and mix it well with the help of a spatula.
Cover and ferment for 20 minutes. Take the fermented dough onto the flour-sprinkled counter and gather the dough by lightly flouring it. Divide it into two equal parts.
Roll it out lengthwise into light flour with your hands. Take it on the baking tray.
For the sauce, mix the flour, cold water, boiling water and egg yolk in a bowl. Spread generously on the pita with a brush.
Shape it with your hands and sprinkle sesame and black cumin seeds on it. Put a small bowl of (hot) water in the oven. Run the oven on the highest setting. Above 200 degrees would be ideal. (250 or more?)
Bake your pita for 15 minutes until golden brown.
