Most curry powder recipes include coriander, turmeric, cumin, fenugreek, and chili peppers in their blends. Depending on the recipe, additional ingredients such as ginger, garlic, asafoetida, fennel seed, caraway, cinnamon, clove, mustard seed, green cardamom, black cardamom, nutmeg, long pepper, and black pepper may also be included.
Ingredients:
Coriander Seeds – 2 tbsp
Cumin Seeds – 2 tbsp
Mustard Seeds – 1 tbsp
Fenugreek seeds – 1 tsp
Black Peppercorn – 1 tbsp
Curry leaves – 12-15 dried
🌶️ Dried Red Chilli – 3-4
Turmeric powder – 1-2 tbsp
Fennel Seeds – 1 tsp
Cloves – 1 tsp
Directions:
Dry Roast all the spices except Curry Leaves, Turmeric Powder and dried red chilies and let them cool down. Once they are cool, transfer them to the blender. Add Chilies and curry leaves and grind them to fine powder. Mix in Turmeric. Now, your curry powder is ready. Transfer it in an airtight container and store them in a cool, dry place. Spice powder will remain fresh for several weeks.
