Baked pasta with cauliflower
Serves 4
Ingredients:
350 g maccheroni
🥦 500 g cavolfiore
🥖 150 g pane
🧀 100 g scamorza affumicata
🧄 1 spicchio aglio
🌿 1 rametto prezzemolo
🐟 2 acciughe sott’olio
🫒 4 cucchiai olio extravergine d’oliva
🧀 50 g Parmigiano Reggiano

Directions:
Clean the cauliflower: remove the stem, divide it into florets. Wash them and cook them in boiling salted water for about 7 minutes.
Drain them and in the same cooking water as the cauliflower cook the pasta till al dente.
Peel and chop the garlic clove and fry it in a pan with the oil and anchovy fillets. Add the cauliflower florets and leave them to flavor for a few minutes. Season with salt and pepper and add a few parsley leaves.
Separately, brown some bread cubes with a little oil and cook the pasta in boiling salted water, draining it al dente as it will complete its cooking in the oven.
Season the pasta with the cauliflower, the bread, the diced scamorza cheese, the grated Parmigiano and the parsley
Pour the pasta into an oiled pan, sprinkle it with the remaining Parmigiano and cubes of bread.
Cook in the oven at 180°C 15 min. or until it's well au gratin.

Parmigiano can be omitted or replaced with other cheeses such as mozzarella, provola or fontina.
