Ingredients:
orzo pasta
olive oil (i use sesame oil)
avocado
cherry/grape tomatoes
cucumber
chickpea nuts
block of feta cheese
bell pepper
spinach
pepper/italian spices to taste
(any other ingredients you like in a salad, the original recipe has olives, and one time i added mushrooms into it)
Directions:
Boil the orzo pasta according to directions, drain water, toss with some oil so it won't stick and let cool.
Chop ingredients as needed and toss with the boiled pasta
Store in the fridge and good to eat cold!
Sidenote: i usually only add the spinach and avocado just as i'm about to eat it, rather than leaving it in the pasta, as those might get soggy
