Турецкие оладьи из кабачка/цукини

Ingredients:
3 mid-size zucchini
🥚 2-3 eggs
🥕 1 carrot
12 tbsp (180 ml) flour / 3 tbsp (45 ml) if potato / (corn?)
🌿🧅 2 scallions
🌿 1 bunch of dill
🧂 1 tsp of salt
1 tsp black pepper
olive oil
🥛 yogurt for serving
Optional:
🌶️ pul biber
🧄 garlic
🧀 cheese/ feta
🥔 potato instead of carrot
Directions:
Grate the zucchini, squeeze the juice.
Grate the carrot, squeeze the juice.
Combine grated zucchini, carrot, scrambled eggs, scallions, dill, salt, black pepper and flour in a large bowl. Blend all the ingredients together and mix with a spatula until the batter is stable.
Set each pancake to be 1 heaping tablespoon.
Fry in hot oil until golden yellow.
Drain the excess oil of the pancakes onto towel paper and put them on a serving plate and serve with whipped yogurt.
Alternatively bake 20 min in the oven at 180°C.
