Ingredients:
🥩🐑 1 kg lamb
🍷 80 g dry white wine
🧄 1 garlic bulb
🍋 Juice of 1 lemon
💧 200 g water
🧅🌿 1 spring onion
🌿 2 sprigs of rosemary
🌿 2 bay leaves
🌿 3 sprigs of thyme
🌿 4 sage leaves
5 juniper berries
Salt
Pepper
🫒extra virgin olive oil
Optional:
🥔 potato
Directions:
First, cut the lamb into pieces and place it in a bowl.
Squeeze some lemon juice (after straining it to avoid getting seeds on the meat); add white wine, crushed juniper berries, crushed garlic cloves with the skin on, bay leaves, and sage.
Let the meat rest in the bowl for an hour.
Preheat a conventional oven to 195°C (383°F).
Place the meat in a greased baking tray. Add more herbs as desired, such as thyme, rosemary, and a few pieces of spring onion. Cover everything with water and drizzle with some olive oil. Then, add salt and pepper, and mix everything together.
Place the tray in the oven and bake for an hour and a half, checking and stirring occasionally.

If you’ve chosen to make oven-roasted lamb with potatoes, the initial procedure stays the same.
Place the meat, herbs, and potato pieces in the baking tray. Just be careful with the cooking time, as the meat might cook faster than the potatoes. In this case, halfway through, you can cover the tray with a sheet of aluminum foil to prevent the meat from drying out too much.
Not only that — the foil will also help keep the meat warm even after it’s out of the oven.
Bring everything to the table and serve hot.
