This is one of my favorite comfort food meals. It reminds me of the beautiful creamy one-pot meals I enjoyed with my brothers and sisters. It is amazing how food can be so nostalgic. Chicken a la King is a super easy heartwarming, satisfying meal. It is quick to come together, making it a perfect weeknight meal. This recipe calls for already baked rotisserie chicken, but you can use any leftover chicken. You can pick up a rotisserie chicken at any club warehouse and most grocery stores. Leftovers warm up quickly right on the stovetop.
Reduce heat to low and stir in the half and half, peas, pimentos, and cooked Chicken. Continue cooking and stirring until everything is hot. If the mixture becomes too thick, add one-quarter cup of chicken broth at a time to reach the desired thickness. Serve over rice, noodles, toast, biscuits, or puff pastry shells.

This chicken salad is delicious. I made it for a buffet luncheon and everybody asked for the recipe. I used green grapes instead of red, because the green grapes I had were a little sweeter. I could not find bone-in chicken breasts, so I bought skinless breasts and poached them. It worked out perfectly. Next time I make it, I will try to find bone-in with skin chicken breasts which I believe will add another layer of flavor.
Thanks for your prompt reply, I made it as you suggested with no modifications (actually I used pistachios instead of almonds because its what I had) but other than that I made the dressing as directed and it was DELICIOUS! I scooped it into pita pockets. This will be my go to chicken salad recipe.

Hi Jen. The recipe calls for rubbing salt and pepper on the chicken before cooking and after cooking the skin and bones are discarded. I am not questioning the recipe just curious to know what function the salt and pepper plays given the skin is discarded. Thanks.
My family has been eating this since the late 70s. In fact I was just thinking this afternoon mmmm I want some enchilada casserole. Only no corn. Would put garlic powder, chili powder, and Tabasco sauce. I would always use rotel tomatoes and canned chicken.
This is totally approved by my husband and I! I felt like it was kind of like a dip rather than a one-dish meal, but he LOVED it! Said he didn't have enough leftovers at work today, and the guys at work were waning to try it but he didn't let them! My rotisserie chicken wasn't as much as I would like to have next time, and I feel the rotel was a little more than I liked. It seemed more like a dip than a casserole dinner but it was delicious! I made this yesterday & it was pretty good. I substituted crushed tomatoes, which we like better than dice, but added an axtra cup of cheese, to try & firm it up. It didn't really work as far as setting it up better, but it was very good none the less. Iused a couple of chicken breasts, which I cut up & browned in a skillet. I have a few pics on my profile page. Good recipe.
I made this tonight! It is in the oven as of right now ? The only thing i did differently was add some onions; I also layered it by putting the Doritos then chicken mixture then Doritos until i reached the top. Hope it turns out yummy ? Thanks for the great recipe!

Crustless chicken pot pie is for people who love the inside of chicken pot pie, but absolutely cannot be bothered to use a crust. Either you don't want to buy pie crust and roll it out, you don't want to make crust from scratch, or it was omitted from your grocery order and you have all the ingredients to make chicken pot pie, except the crust! I'm definitely speaking from experience here!
I promise your whole family will loves this recipe! It uses a pound of chicken tenders to serve 2-3 people, but you can double the recipe to make it serve more people and use a whole pound of chicken tenders.
In the sauté chicken step you say 'it's okay if the insides are still slightly pink." But then no where later in the recipe does it mention finishing off the chicken. I'm just curious, when you make this do you throw the chicken back in at some point? The way the recipe is worded I was expecting to see the chicken cooking off later in the recipe. I made this recipe exactly as directed Except I used plain Greek yogurt instead of sour cream, and I used canned chicken breast. It was absolutely delicious and so easy and quick to make! Regards Maria
