Mayonnaise Chocolate Cake
Oven temperature: Gas mark 4 middle shelf / 350°F / 180°C / 170°C (ish) Fan oven
Serves: Depends on how small you can cut the slices!
Cooking time: 1 hour approx.
275g Self raising flour
225g caster sugar
1 ½ teaspoons baking powder
200g jar mayonnaise
4 tablespoons cocoa
225ml hot water
1 teaspoon vanilla essence
Greased 6 – 7 inch (15cm – 18 cm) round cake tin
2 level teaspoons coffee and 2 tablespoons cocoa dissolved in 2 tablespoons hot water
225g icing sugar
For the cake:
Mix all ingredients together. Mix well and place in tin.
Mixture is quite runny. Cook for about 1 hour
When cool cover with the icing.
For the icing:
Cream together margarine and sugar.
Stir in coffee and cocoa dissolved in the hot water. Mix well.
Smooth over cake
