Ingredients:
1 kg mutton, preferably with bones, cut into pieces
3-4 tablespoons vegetable oil or ghee (clarified butter)
2 large onions, finely sliced
2 tablespoons ginger-garlic paste
2-3 green cardamom pods
2-3 cloves
1-inch cinnamon stick
2 bay leaves
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon Kashmiri red chili powder (adjust according to heat preference)
1/2 teaspoon turmeric powder
1/2 teaspoon ground ginger
1/2 teaspoon ground fennel
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup plain yogurt, whisked until smooth
Salt to taste
Fresh coriander leaves for garnish (optional)
Water as needed
Instructions:
Turn on the TurboCook Pro pressure cooker and select the "Meat" or "Pressure Cook" setting.
Heat vegetable oil or ghee in the pressure cooker using the sauté function. Add sliced onions and sauté until they turn golden brown.
Add ginger-garlic paste and sauté for a couple of minutes until fragrant.
Add the whole spices - cardamom pods, cloves, cinnamon stick, bay leaves, cumin seeds, coriander seeds, and fennel seeds. Stir and cook for another minute until aromatic.
Add the mutton pieces to the pressure cooker and sear them until browned on all sides.
Add Kashmiri red chili powder, turmeric powder, ground ginger, ground fennel, ground cinnamon, and ground cloves. Mix well to coat the mutton pieces evenly with the spices.
Pour in the whisked yogurt, stirring continuously to prevent curdling. Cook for a few minutes until the yogurt blends well with the spices.
Add salt to taste and enough water to cover the mutton pieces.
Close the lid of the pressure cooker and set the cooking time according to the TurboCook Pro's instructions for mutton. Usually, it will be around 20-30 minutes under high pressure.
Once the cooking time is complete, release the pressure naturally or using the quick release valve, depending on the TurboCook Pro's instructions.
Open the lid carefully and check the consistency of the gravy. If it's too thin, you can simmer it for a few more minutes using the sauté function until it thickens.
Garnish with reserved fried onions and fresh coriander leaves.
Serve hot with steamed rice, naan, or roti.
