Made this as a chicken sandwich. Only change to the chicken was I marinated it in buttermilk/hot sauce and pickle juice. The honey hot sauce was awesome! Delicious and will be in our rotation. Thank you for the great recipe!

I thought I melted too much butter (2 TBS) , but used the excess butter, pan juices, a paste of corn starch and Kitchen Bouquet ( a browning liquid for gravy) to make a sauce/gravy. And it turned out excellent. The chicken was moist, flavorful . Served with brown rice, peas and corn. It was a dinner to be proud of. Thank you for posting the recipe.

For me the key to getting a super crispy skin is baking for a long time at least an hour but often longer at as high a heat as your oven will go ,500 or 550. I do not think 425 will get the results that I am looking for. The skin will be hard, crunchy and crisp with a deep potato flavor.

Hi. I have been doing this for decades and you are correct, yummy crispy outside, mashed potato creamy inside. I have found it works better when using the oven, if one just puts the potato directly on the rack instead of in a sheet pan. Also, if not Vegan, unsalted butter is better than oil. Also is awesome on a Big Green Egg on a potato rack. Just yummy!


My first try at this recipe. I adjusted the chix, rice and liquids to serve 4. I used an 88 dish and this is where I went wrong. It took an extra 20 min. to get the liquids absorbed into the rice. I also increased the temp to 375 Convection. I will try again because it is soooo easy to prepare and clean up after. I will use a larger dish next time.

To reheat oven baked salmon, warm slow and low and add a splash of water too for added moisture. I also like to reheat the all types of salmon in the oven or a pan on the stove rather than microwaving as microwaving also tends to dry meat out faster when reheating.

Well, guess what happened? My husband liked this oven-baked BBQ rib recipe better than Grandma Barbs!! The only thing I did differently was added more spices to the rib spice rub recipe. I think this kicked up the taste of the BBQ sauce and even helped to tenderize them a little more.

This is an incredible recipe, not too many ingredients and easy to do. I did not need the broiler. My 2 chops were not the same, so 15 minutes was perfect for one but all I did was shut off the oven and put the other back in the oven. Turned out perfectly juicy and tasty.

On the negative side:

1) green garnish in the photos, but no mention in the recipe

2) in one spot the article says to sprinkle dry ingredients all over chops and in another spot it says to rub the mixture onto the chops

On the positive side: moist and yummy

This recipe was inspired by the oven risotto from Epicurious! This is very similar to theirs, but mine just has a shorter, more basic ingredient list and some lemon excessiveness in the best possible way.

I most often roast potatoes at 425F as I love how it crisps the outside. Depending on what else you have going in the oven, you can cook potatoes at a lower temp if needed (but you may need a longer baking time).

Perfect easy side dish! I have been making recipes for years and stumbled upon this recipe just to try something different. Everything is spot on just the way the recipe is written. However, this is the easiest recipe to play with. My go to spices are salt, pepper, season salt, garlic powder, Italian seasoning and a little bit of smoked paprika.

Super easy recipe, extended the time because of the roast in the oven at 350. I used fingerlings cut in half and roasted them for an hour. Came out great. My only complaint is the advertising laced through the recipe.

I mill my whole dent corn from Barton Springs Mill in Texas. I use my Mock Mill and can grind at whatever coarseness I need. For polenta I grind slightly coarse I then use my hands off version of polenta . I use my double boiler. No need to stir frequently or heat up the oven. It cooks beautifully and only requires a couple quick stirs. It then stays hot over the water while I finish whatever we are having beneath it. We like sauted mushrooms with preserved lemons. Yum. Hope this offers others an alternative method.
