The purpose of the Ship From ZIP notation on the label is to show that the correct postage was calculated when shipping from a location other than the return address. Generally speaking, if the first three digits of the Ship From ZIP match the origin post office location, the postage paid will be correct.

As for "credit," the post office gets that by scanning the package for tracking purposes. If they don't bother to scan it, then no one will ever know they handled it (regardless of what Ship From value is showing; some 5-digit ZIPs are served by multiple post offices, especially in heavily populated areas).

So yes, from some messing around that I tried in the Shipping forms just now, it appears that you need to choose an alternate address as well (even though only the ZIP portion of the Ship From address will actually appear on the label). You can maintain the same Return Address for the label; that is stored separately. If you don't know the exact address of the alternate post office whose Ship From ZIP code will be showing, you should be able to plug in "General Delivery" instead in the "Street address" field of the form.

This sounds like a nightmare resulting from your uncooperative and awkward buyer. One final thing that you could do is to tell them if they can't get to their local delivery office or are unlikely to ever be in is to go on the Royal Mail web site and arrange for it to be delivered to their local Post Office where they can pick it up

Involving the Post Office in this rigmarole now adds 16p to the cost because you are asked where you are going to drop the package. No supplemental charge if you keep it in the Royal Mail family - sorting office, post box or pick up. I think that this is a bit of game play from royal mail and the post offices (who are independent) - Royal mail want to phase them out by stealth. The 16p looks innocuous but it's enough to make people not go to the post office and if people don't go to the post office then Royal Mail will have the stats/data to show that they're no longer needed... they will be gone and they are are one of the centres of your community - I vote to pay the 16p and screw Royal Mail collection - why else would they want to provide a loss leading service?! it's so they can hoist up the charges for collection once the post office is no more.

There's loads of delivery companies the post office could be used as drop off for not just royal mail. They could even secure deals with evri, yodel, ups, etc ... to keep people using the post office.
