Healthy almond cookies with raisins


3 cups of almond flour (I use Bob's Red Mill Almond Flour)

1/2 tsp Baking Soda

1/4 cup olive oil

1/4 cup maple syrup

2 whole eggs

1 cup of raisins


Preheat oven to 375F (190C). One batch (approx. 29 cookies) fits onto one standard-sized cookie sheet. Use parchment paper or non-stick foil to cover the tray.

Mix flour and baking soda, set aside.

Mix oil, maple syrup and eggs until creamy, manually it takes about three minutes. Add raisins and mix for another minute.

Slowly add the flour and baking soda mix to the combination of oil, maple syrup, eggs, and raisins. Stir it all together until raisins are evenly distributed.

Pinch off a piece of the dough the size you would like the cookie to be. Then roll a ball out of it with your palms and flatten it down to about 1/3 of an inch thick. Place it onto the baking tray. Use a small amount of water to wet your palms, so that the dough does not stick. Repeat until all the dough is used.

Bake for 15 minutes at 375F (190C) if you want them to be soft.

For the crunchy ones, after 15 minutes @375F reduce head down to 300F (148C) and cook for another 10 minutes. Sometimes, I flip them over.
