Stuffed Mushrooms
Cooking spray
1 1/2 lb. baby mushrooms, rinsed
2 Tbsp. unsalted butter
2 cloves garlic, finely chopped
1/4 cup bread crumbs
Kosher salt
Freshly ground black pepper
1/4 cup finely grated Parmesan, plus more for topping
4 oz. cream cheese, softened
2 Tbsp. chopped fresh parsley, plus more for serving
1 Tbsp. chopped fresh thyme
Step 1
Preheat oven to 400°. Grease a baking sheet with cooking spray. Remove stems from mushrooms and finely chop. Arrange caps on prepared sheet.
Step 2
In a medium skillet over medium heat, melt butter. Add chopped mushrooms stems and cook, stirring frequently, until most of the moisture is evaporated, about 5 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute more. Add bread crumbs and cook, stirring frequently, until slightly toasted, about 3 minutes; season with salt and pepper. Let cool slightly.
Step 3
Transfer bread crumb mixture to a large bowl. Add Parmesan, cream cheese, parsley, and thyme; season with salt and pepper and stir to combine. Fill mushroom caps with filling and sprinkle with more Parmesan.
Step 4
Bake stuffed mushrooms until softened and the tops are golden, about 20 minutes.
Step 5
Transfer stuffed mushrooms to a platter. Top with parsley.

Mushroom Rice
1 cup long-grain white rice (or basmati)
2 tablespoons olive oil
1 tablespoon butter
1 medium onion, finely chopped
3 garlic cloves, minced
2 cups cremini or button mushrooms, sliced
2 cups vegetable broth (or chicken broth
Salt and pepper
Chopped parseley
Step 1
Heat 1 tablespoon of olive oil in a large pot and add half of the mushrooms. Cook until nicely browned, remove the pot, set aside for later.
Step 2
To the same pot, add another tablespoon of olive oil, onion, garlic, and remaining sliced mushrooms. Cook for about 5 minutes. Add salt and pepper to desired taste.
Step 3
Add the rice to the mushrooms and cook, stirring continuously, for about 2-3 minutes.
Step 4
At this point, add the broth, stir, and bring to a boil. Reduce the heat to medium low, cover with a lid, and simmer for 15 minutes
Step 5
After the 15 minutes have passed, turn off the heat and remove the lid. Add about 1 tablespoon of butter, the reserved mushrooms (reserved from step 1), and the parsley (no stirring). Put the lid back on and let the Mushroom Rice rest for 10 minutes.
Step 6
Lastly, remove the lid, stir everything together, and serve immediately. Enjoy!

Creamy Mushroom Soup
2 tablespoons butter
1 tablespoon olive oil
1 large onion, diced
4 cloves garlic, minced
1 pound mushrooms, sliced
2 tablespoons all-purpose flour
4 cups chicken or vegetable broth
1 cup milk
Salt/Pepper
Fresh thyme
Step 1
In a large pot. heat the butter and olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the garlic and sauté for another minute
Step 2
Add the sliced mushrooms to the pot and cook until they release their juices and begin to brown. about 8-10 minutes
Step 3
Sprinkle the flour over the mushroom mixture and stir well to coat. Gradually pour in the broth, stirring constantly to prevent lumps. Bring to a simmer.
Step 4
Reduce the heat to low and stir in the milk. Continue to cook until the soup thickens to your desired consistency, about 5 minutes. Season with salt and peper to taste
