Research Focus
Our lab investigates the design, stabilization, and application of emulsions for biomedical and food science applications. Our research focuses on utilizing naturally derived biomaterials for drug delivery, particularly in the development of targeted anticancer formulations, oral drug delivery systems, and topical therapeutics. We also explore the incorporation of emulsions in food products, such as using structured emulsions as fat replacers in meat-based formulations to improve nutritional profiles. A key aspect of our work involves optimizing processing methods, such as sonication, to enhance emulsion stability and performance, allowing for more effective encapsulation and controlled release of active compounds.
