Taco Pizza

What you need:

1-8 or 9” cast iron skillet

2-Saucepans

1-Skillet

 

Pie Cust

2 ½ c water

1 ½ c Masa Harina flour

1 tsp salt

 

Refried Beans

1 cup refried beans (I use Rosarita canned)

2 tbsp heavy cream

1 tsp olive oil

¼ tsp oregano

¼ tsp ground coriander

½ tsp garlic powder

½ tsp cumin

 

Meat

1 ½ pounds of ground beef (I use 85/15)

¼ c chopped onion

2 tsp chili powder

1 tsp cumin

 

Sauce

1 Avocado

½ c cream cheese

1 lime (juiced)

1 garlic clove chopped

¼ c chopped fresh cilantro

 

Salad topping

¼ iceberg lettuce shredded

2 small tomatoes diced and salted

 

What you need to do: 

Preheat oven to 350-degrees,  prepare your pie crust by mixing all ingredients in a saucepan over medium heat for about 5 minutes, constantly stirring. Once the flour pulls away from the saucepan it is ready. Press it down into the bottom of your cast-iron skillet. Bake in preheated oven for 30 minutes. While your crust is cooking make your refried beans. In a saucepan over medium-low heat, place your olive oil and your spices and cook for 30-45 seconds to let the spices become aromatic. Then add your beans and heavy cream and cook for 2 minutes. Place a lid on your saucepan and remove from heat. Next, prepare your meat. Cook your ground beef in a skillet over medium heat with chopped onion 5-7 minutes, drain and return to skillet and add your spices (mixing well). By this time, your crust alarm will be going off. Remove your crust from the oven, spread the refried beans on top, then top it with your meat. Place it back in the oven for 10 minutes, while you prepare the sauce.  In a medium mixing bowl combined all sauce ingredients, smashing them together to make a thick dressing. Remove your pie from the oven, top it with the sauce, then cheese, then shredded lettuce, then chopped tomatoes and finally, sour cream. Let stand for 10 minutes, slice and serve.  

 

Helpful Hints: 

Be sure to not over mix your dough for your pie crust. It is ready when it pulls away from the sides of your saucepan. It will have a cookie dough consistency. Be sure you wait to add your spices to the meat until after your have drained it. The recipe above is typed in order, so first make your crust, then your beans, then your meat, then your sauce and then your salad, this will time out perfectly.
