Loaded Potato Soup
What you need:
1 large dutch oven
Ingredients:
3 lbs of potatoes, peeled, rinsed and diced into 1” cubes
12 strips of bacon cooked and chopped. (divided)
3 tbsp butter
1 medium onion chopped.
3 large garlic cloves (minced)
1/3 c flour (all-purpose)
4c chicken broth
2c milk
2/3c heavy whipping cream
2/3 c sour cream
Salt & pepper to taste.
Toppings:
Crisped chopped bacon.
Sour cream
Shredded cheese
Chives
What you need to do:
In a large cast iron dutch oven over medium heat, add your butter and onions. Cook 3-5 minutes until translucent. Add garlic and cook 1 minutes. Add flour & stir well. Now add your potatoes, broth, milk, heavy cream, salt & pepper. Stir, bring to a boil and cook until potatoes are fork tender. Remove half and mash the remainder left in the pot. Now add the removed portion, stir, and add half the bacon and sour cream. Stir well and cook on low for 10-15 minutes.
Helpful Hints:
Top with cheese, sour cream, bacon and chives I served mine with grilled cheese (use mayonnaise instead of butter on the outside of your bread) I also use shredded cheese (I grate my own.)
