The following tracks have been added! See full track list for additional notes.
Area 64 (SquireTurnbolt) - Track Version 1.0
DKR Ancient Lake (Squadaloo) - Track Version 1.0
Ice Cream Fortress (Citrus) - Track Version 1.1
Midnight Museum (SquireTurnbolt) - Track Version 1.0
Shy Guy Skies (Squire Turnbolt) - Track Version 1.1
The following tracks have been removed.
Sandstone Cliffs (Citrus)
Since I really want to include all of my tracks in my own pack, I had to make an unfortunate choice on which track to remove for DKR Ancient Lake. Sandstone Cliffs ended up losing a battle against Shadow Woods due to its long length and relatively repetitive nature.  Yes, I realize it's sort of unfair to remove t his for Ancient Lake of all tracks, but my pack, my rules.
GCN Dino Dino Jungle (Tock) has been updated to version 1.3
Super Bell Circuit (Squadaloo) has been updated to version 2.0
An additional Custom Cup has been added
This technically means there is only room for one more custom cup based on my original plans, although those may change if other ports from other games are added, in which case I may spin the two DKR tracks out into a separate cup.
The strap screen no longer has a QR code (I was mislead to believe the site I was using allowed for creation of free QR codes only for them to later email me that I had to get a paid account or else they'd deactivate it and only has one page of information
Only NTSC has been tested. Not sure if this works for other regions. If it does/does not, let me know.
Here is the complete track list for Mario Kart WiiMix as of this version along with some notes where relevant. In total, there are 160 tracks (32 from the original game, 104 from other Mario Kart games, and 24 Custom Tracks). The courses are arranged in chronological order of Mario Kart games and custom tracks bringing up the rear.
Music for all of the retro tracks are their original music tracks unless otherwise listed.

This is the 3 lap version.

SNES Bowser Castle 1 (ChaosShadow23)
SNES Mario Circuit 2 (ZPL)
SNES Ghost Valley 2 (Nintendo)
SNES Choco Island 1 (Noia)
SNES Donut Plains 2 (Noia)
Yes, I know I could have called this Lightning Cup, but I only wanted to use sprites from the original course select screen.
SNES Bowser Castle 2 (ChaosShadow23)
SNES Mario Circuit 3 (Nintendo)
SNES Koopa Beach 1 (Noia)
SNES Choco Island 2 (Zilly)
SNES Vanilla Lake 1 (SquireTurnbolt)
SNES Bowser Castle 3 (ChaosShadow23)

This is the larger variant of this track.
Music is from Mario Kart 8

N64 Toad's Turnpike (NintenYoshi)
Music is from Mario Kart 8
N64 Frappe Snowland (NintenYoshi)
N64 Choco Mountain (TacoJosh)
Music is from Mario Kart 8 Deluxe
N64 Mario Raceway (Nintendo)
N64 Wario Stadium (Zilly)
This was manually edited by me to reduce the lap count from 3 to 2. Personally I like tracks in the 2-3 minute sweet spot in length and the 2 lap count puts it nicely in that range.
Music is from Mario Kart 8.
N64 Sherbet Land (Nintendo)
N64 Royal Raceway (ZPL)
Music is from Mario Kart 8.
N64 Bowser's Castle (Nintendo)
N64 DK's Jungle Parkway (Nintendo)

Music is from Mario Kart 8.
GBA Peach Circuit (ZPL)
Music is from Mario Kart 8
GBA Shy Guy Beach (Nintendo)
GBA Riverside Park (ChaosShadow23)
GBA Bowser Castle 1 (Bri)
The glider ramp has killed me on more than one occasion by landing me directly between two of the islands at the end, but I stuck with this version for now because it's the correct number of laps and visually looks the best to me.
GBA Mario Circuit (MysterE99)
Music is from Mario Kart 8
GBA Boo Lake (ChaosShadow23)
I know there's a well liked complete overhaul of this track, but while it does look nice I honestly feel like between its complete change in visuals and major layout changes that it goes a bit too far for me to use it here. I honestly may consider adding it one day as a custom track though and call it something like GBA Boo Lake X.
Music is a remix by TheNobleDemon.
GBA Cheese Land (ZPL)
Music is from Mario Kart 8
GBA Bowser Castle 2 (ChaosShadow23)
GBA Luigi Circuit (Zilly)
Music is from Mario Kart 8
GBA Sky Garden (Squadaloo)
What was I going to do, not use my own here?
Music is from Mario Kart 8 Deluxe

GBA Sunset Wilds (Flint)
Music is from Mario Kart Tour
GBA Snow Land (cpfusion)
GBA Ribbon Road (Gabriela)
Music is from Mario Kart 8.
GBA Yoshi Desert (ZPL)

GBA Lakeside Park (Flint & Hman6516)
GBA Broken Pier (xBlue98)
Music is a remix by TheNobleDemon.
GBA Bowser Castle 4 (ChaosShadow23)
GBA Rainbow Road (ChaosShadow23)
Much like Boo Lake, I know there's a well liked major overhaul version of this track. However, I feel it has serious pacing issues and the main thing I associate with GBA Rainbow Road is its relentless pacing, especially in the ending of the course with boosters everywhere, so I opted to use a more traditional remake instead.
The music is a remix by Panman Music.
GCN Luigi Circuit (Tock)
GCN Peach Beach (Nintendo)
GCN Baby Park (Bruh de la Boi)
Music is from Mario Kart 8.
GCN Dry Dry Desert (ZPL)

GCN Mario Circuit (Nintendo)

GCN Yoshi Circuit (Tock)
Music is from Mario Kart 8.
GCN Mushroom City (Riidefi & Tock)
GCN DK Mountain (Nintendo)
GCN Wario Colosseum (MKDasher)
I chose this version because I ended up running into an issue where I fell off of the other version and respawned and somehow missed a key checkpoint, resulting in a guaranteed loss. The other version has since been patched so I will re-evaluate for the next update.
GCN Dino Dino Jungle (Tock)
GCN Bowser's Castle (Tock & Wiimm)
GCN Rainbow Road (Riidefi & Tock)
Music is a remix by Panman Music.
DS Figure-8 Circuit (Quajeek99 & Sniki)

DS Luigi's Mansion (Tock)

Music is from Mario Kart 8.
DS Mario Circuit (ZPL)
DS Airship Fortress (Sniki)
DS Wario Stadium (ZPL)
DS Peach Gardens (Nintendo)
DS Bowser Castle (Sniki)
DS Rainbow Road (maczkopeti)
Yes, I know the loops are janky as Hell, but in my mind it's the single defining feature of the course and removing them would basically defeat the purpose of remaking the track in the first place, so yeah, this version's got loops.
These are all just the Nintendo versions so I won't bother listing every track here.
3DS Toad Circuit (SKmaric)
I picked this version because it's the only one that didn't turn all of the coins into item boxes on the last turn.
Music is from Mario Kart 8 Deluxe
3DS Daisy Hills (Atlas)
3DS Cheep Cheep Lagoon (Tock)
3DS Shy Guy Bazaar (Atlas)
3DS Wuhu Loop (FunkyDudge15, Riidefi, & Zachruff)
3DS Mario Circuit (ZPL & Bri)
Music is from Mario Kart 8 Deluxe
3DS Music Park (Atlas)
3DS Rock Rock Mountain (MrKoeikoei & Zilly)
3DS Piranha Plant Slide (Atlas)
3DS Wario Shipyard (Atlas)
3DS Neo Bowser City (Atlas)
I know this version has an issue where you can blind jump into the abyss at the end, but I prefer it because the other version adds unnecessary Goombas.
3DS Maka Wuhu (FunkyDude15 & Wexos)
3DS DK Jungle (Skipper93653)
3DS Rosalina's Ice World (MysterE99 & Skipper93653)
3DS Bowser's Castle (Wexos & Atlas)
3DS Rainbow Road (Bladestorm227)
Not a big fan of how this one handles the glider sections, but the other ones either seemed off to me or had weird changes like changing the mushrooms into cookies.
Wii U Thwomp Ruins (SquireTurnbolt)
I know this port isn't quite up to Wii standards in the poly count department, but it plays fine.
Wii U Mario Circuit (TheGamingBram)
Wii U Twisted Mansion (TheGamingBram)
I'm aware TheGamingBram has pretty well remade every course in Mario Kart 8, but I'm not a fan of how many of them play. However, as they get updated to 2.0, they seem to be significantly improved so I'm starting to include a few I feel are mostly fine.
Wii U Dolphin Shoals (MrFluffy)
Wii U Electrodrome (SquireTurnbolt)
Wii U Bone-Dry Dunes (Noia)
Wii U Rainbow Road (Squadaloo)
Wii U Animal Crossing (ZPL)
Like in Mario Kart 8, the game will randomly select from one of the four seasons when you select the track.
MKT RMX Mario Circuit 1 (Noia)
MKT RMX Choco Island 1 (Noia)
MKT N64 Kalimari Desert 2 (Bruh de la Boi & Krummers)
Honestly it may seem like overkill to have this in here when Kalimari Desert is plenty fine, but I honestly find this course so bizarre that it exists in official capacity that I had to include it.
MKT RMX Rainbow Road 1 (Noia & Toxic Prime)
MKT Merry Mountain (Noia & NintenYoshi)
MKT RMX Rainbow Road 2 (Bruh de la Boi)
MKT Sydney Sprint (Bruh de la Boi)
Currently Sydney Sprint 2 isn't included, but it will be included once there's more Tour tracks to fill out a cup.
MKT RMX Ghost Valley 1 (Bruh de la Boi)
Area 64 (SquireTurnbolt)
Music is GCN Luigi's Mansion Battle Course from Mario Kart 8 Deluxe

Music is "Honeymoon Lune Caves" from Super Mario Odyssey

Coin Heaven (TacoJosh)
Music is "Above the Clouds" from Super Mario Odyssey.

Music is Wii Moo Moo Meadows
DKR Ancient Lake (Squadaloo)
Music is "Ancient Lake" from Diddy Kong Racing...and so is the track, for that matter, albeit remade from the ground up for Mario Kart Wii.
DKR Frosty Village (Squadaloo)
Music is "Frosty Village" from Diddy Kong Racing...and so is the track, for that matter, albeit remade from the ground up for Mario Kart Wii.
Dream Land Drive (Squadaloo)

Music is "Darkmoon Caverns" from Diddy Kong Racing
Pianta Shore (NateFox)
Music is GCN Peach Beach
Quaking Mad Cliffs (MrFluffy)
Music is "Rocket Barrel 1 (Short)" from Donkey Kong Country Returns. I don't know why, it just felt appropriate to me.
Shadow Woods (Sniki)
Music is "Moogle Forest" from Chocobo Racing since the layout was taken from it.
Shy Guy Skies (Davidslane and SquireTurnbolt)
Music is Wii U Cloudtop Cruise
Spectral Station (MrFluffy)
Music is "Shifty Boo Mansion" from Super Mario 3D World
Super Bell Circuit (Squadaloo)
Music is "The Credits Roll" from Super Mario 3D World (I figured its tempo was more appropriate for a race than Super Bell Hill's song)
Super Marine World (MrFluffy)
Music is N64 Sherbet Land
Vile Isle (Citrus)
Music is N64 Bowser's Castle
